A simple and protein-packed broth, soy is commonly used in vegetarian diets due to its high protein content, but in any case it is a good source of nutrients for children, who will appreciate this original soup.
- 1 l. of water
- 125 gr. green soybeans
- 200 gr. pumpkin
- 2 potatoes
- 2 carrots
- 1 leek
- Olive oil
- Black pepper
1. Wash the vegetables well and dice them.
2. Put water to heat in a large pot, add the vegetables together with a drizzle of olive oil, a teaspoon of parsley, black pepper to taste and a pinch of salt.
3. Put on high heat until it boils, then lower the temperature and cook over low heat for 30 minutes.
4. It can be served like this or crushed by passing it through the blender or the food processor. In this case, remove almost all the water and add a little after grinding the vegetables until the desired texture is obtained.
